Feta, Olive and Sunflower Loaf

The beauty of this loaf besides the amazing flavour, is it’s ingredients are all mixed in one bowl – simple and easy!

Cut into generous slices and eat on it’s own or serve toasted and buttered.
 

INGREDIENTS

 

1/2 cup sunflower oil
3 eggs
1 cup of low fat milk or lactose free
3 spring onions chopped
3/4 cup of chopped pitted kalamata olives
1 3/4 cups  greek feta cheese chopped in small cubes
1/2 cup of sundried tomatoes chopped
1 3/4 cups of self raising flour sifted
1 tsp baking powder sifted
4 tbs  mint chopped
4 tbs  coriander chopped
1 heaped tsp sunflower seeds
1 heaped tsp white sesame seeds
1 heaped tsp black sesame seeds
 
METHOD
 
Preheat oven to 180 degrees
Grease a large loaf tin
Whisk the eggs in a large bowl then stir in milk and oil.
Add spring onions, olives, feta cheese, sundried tomatoes, herbs and stir again.
Sift in the flour and baking powder and mix until combined.
Pour the mixture into the prepared loaf tin and sprinkle with sunflower seeds and white and black sesame seeds over the top.
Bake for 40 – 50 minutes.
Remove from the oven and allow to cool for 20 minutes.
