Healthy Muffins plus a Muffin treat!

Some muffins are really just a sugary cupcake in disguise but not these wholesome creations.

They are all the good things about a healthy breakfast/ snack baked into a handy package.

STRAWBERRY, RICOTTA  & OATMEAL MUFFIN

INGREDIENTS

1 1/2 cups of chopped strawberries

1/2 cup rapadura sugar

1 teaspoon vanilla bean essence

2 cups wholemeal self raising flour

2/3 cup light flavoured extra virgin olive oil

2 eggs

1 cup buttermilk

1 cup fresh ricotta

OAT CRUMBLE

2 tablespoons rolled oats

1 tablespoon wholemeal self raising flour

1 tablespoon rapadura sugar

2 tablespoons light flavoured extra virgin olive oil.

METHOD

Preheat oven to 180C.

Oat Crumble : place oats, flour, oil and sugar in a small bowl and mix to combine. Set aside.

Place the strawberry, sugar and vanilla in a large bowl, toss to combine and set aside for 10 minutes.

Add the flour, oil, eggs, buttermilk and ricotta and stir until just combined. Divide the

mixture into a lightly greased muffin tin.

Sprinkle with oat crumble.

Cook for 25-30 minutes or until cooked when tested. Set aside to cool.

Eat warm or cold.

BLACKBERRY, APPLE and GRANOLA MUFFINS

INGREDIENTS

2 cups of wholemeal self-raising flour

1/2 cup rapadura sugar

2 eggs

1 cup buttermilk

2/3 cup light flavoured extra virgin olive oil

1 teaspoon vanilla extract

1 small apple, grated

2 cups frozen blaackberries

1 cup of granola.

METHOD

Preheat oven to 180C. Place the flour, sugar, eggs, buttermilk, oil,

vanilla, apple and blackberries in a large bowl and mix until just combined.

Divide the mixture into a lightly greased muffin tin.

Sprinkle with granola.

Cook for 25 – 30 minutes or until cooked when tested. Set aside to cool.

MUFFIN TREAT – MINI CHOC CHIP MUFFINS

Mini muffin recipe is delicious or as my son would say “superb”

A big family favourite.

INGREDIENTS

3/4 cup of unsalted butter (softened)

1/2 cup unrefined castor sugar

2 eggs

1 cup plain flour

1 1/2 teaspoon baking powder

1 cup choc chips

METHOD

Preheat oven to 200C. Lightly grease a mini muffin tin lightly with oil or butter.

Cream the butter and sugar together then slowly add eggs, mix for 3 minutes.

Add the flour, baking powder and chocolate chips, stir to combine.

Divide muffin mixture into mini muffin tin.

Bake for 20 minutes or until golden on top.

Set aside to cool. Eat warm or cold.
